Steaming food is not only a healthier way to cook but it is less hassle too. Not much washing is need after cooking, and I can attend to other things while waiting for the food to cook.
All you need is either a steamer or a wok. It is good to invest in a wok if you plan to do Chinese food often because a wok can be used for a variety methods of cooking. Fry, stir fry, deep fried, braise, steam and even soup.
If I am running out of time and need to prepare a quick meal, I'll always choose to steam.
This week, I am going to share with you my children's favourite steamed fish, a dish I learnt from my father-in-law. It involves a little bit more work but if your children loves tomatoes, they might most probably love this dish.
Now, lets look at the ingredients.
Ingredients: Any kind of fish suitable for steaming (here I use four finger thread fin), one to two tomatoes depending on the size of the fish, a few slices of ginger, a few cloves of garlic, soy sauce, cooking oil, Chinese parsley.
1. Put the slices of ginger on the plate you will be using to steam the fish.
2. Clean the fish and sprinkle some salt on it. Put it on top of the ginger. This is to prevent the fish from sticking on the plate. Set aside.
3. Start boiling water for steaming either in a steamer or a wok.
4. While waiting for the water to boil, cut the tomatoes into chunks and mince the garlic.
5. In a pan, heat some cooking oil and add in the garlic. Sauté until almost golden brown then add in the tomatoes. Let it simmer under medium to low fire for about 5 minutes. Add in soy sauce before turning off the heat.
6. Pour the tomato paste onto the fish and steam for 12 minutes (steaming time depends on the size of the fish).
7. Garnish with Chinese parsley before serving.
